Research and development
The concept of bio-preservation is integrated into the quality management process of the company. (microbiological analysis of raw material, control of the shelf life of existing products).
The process is applied to chilled raw or cooked food products just before being vacuum or modified atmosphere packed (fresh fish fillets, smoked fish, prawns, prepared food…).
The protective LLO strain retards the growth of spoilage bacteria in packed food, and more importantly inhibits the growth of Listeria monocytogenes which remains a risk for food safety when the shelf life is extended.
A ready-to-use packed freeze dried starter bacteria is provided by Bioceane. It contains a guaranteed high concentration of pure viable cells. Each dose must be diluted in an precise volume of water before use. The suspension of the starter can be sprayed onto the food or directly added to the food mixture.

In our laboratory, we study the effects of adding to food a protective lactic acid bacteria (analysis of background bacteria, control of spoilage bacteria, ensuring optimum conditions for application). When the shelf life is assessed we propose the industrial application of the process, with the technical implementation on the production line, and the monitoring of finished products.
